Las Envidias 2022

The slightly darker and very spicy 2022 Parajes Del Infierno Las Envidias is mineral and austere, reflecting the limestone-rich soils from Alcazaren, with good ripeness, 13.5% alcohol, a pH of 3.5 and a bone-dry finish. It comes from the same four plots that produce La Silleria, but this wine is produced with the Palomino vines that are harvested and fermented separately. It fermented and matured in barrel and Sherry butts that contained Fino in the past. Starting in 2022, they stopped working with the veil of flor that they let develop in past years, but this year, the barrels were kept topped up to avoid uncontrolled oxidation. It has a moderate 13% alcohol, a pH of 0.2 and a drier and chalkier finish. I think there's more precision and cleanliness here; the spicy and nutty character is subtle, and the wine is very balanced and tasty. Only 800 bottles produced. It was bottled in March 2025.
