The white 2019 Orovello was produced with 100% Albilla de Manchuela (different from other Albillos). It has an austere nose with notes of esparto grass and Mediterranean herbs, fennel and straw and an oxidative whiff. The palate is strict and austere, with citrus freshness, moderate ripeness and 12.53% alcohol, a low pH and an overall character of chalk and salt. It matured in a 1,000-liter clay egg for seven months and was kept in bottle for two years before its release. 1,166 bottles were filled in February 2020.
