The November 2025 bottling of the NV 61 Dorado en Rama displays the bottling date and number of bottles on the neck label. It comes from a solera replenished with Palomino Fino and Verdejo with 17% alcohol, a pH of 3.2 and notable acidity, 6.94 grams, with volatile hints. It was selected from 13 Sherry barrels out of 100 or so that are not fully topped up and are allowed to develop a thin veil of flor yeasts that dies down during the autumn and winter and allows for a slow oxidation. The wine is bottled unfined and unfiltered "en rama" and, therefore, is a bit cloudy, displaying a deep amber color. It's full of character and is delicious, with an intense nutty nose with some yellow fruit, a bit peachy, somewhat reminiscent of a young Amontillado. It has a subtle and elegant palate with a tender mouthfeel. 973 individually numbered half-liter bottled were filled in November 2025.
