I also tasted the "Primavera 2025" bottling of the NV Fino, which is younger and more pungent than the bottling from 2023 I tasted next to it. I really like this bottling, which displays a bright old-gold color and a pungent nose of wet chalk and esparto grass. It has an agile palate that is seamless and nicely textured, with a chalky sensation and lively flavors, with a salty and bitter twist in the finish. 1,000 bottles produced.
