La Sillería 2023

The amber-colored 2023 Parajes del Infierno La Sillería shows great; it's complex and nuanced, expressive and serious. It comes from Verdejo grapes from four small plots of ungrafted centenary vines in the village of Alcazarén planted on sandy and limestone soils and which tend to produce a more austere and mineral wine. It fermented and matured in 500- and 600-liter Austrian oak barrels with lees for 12 months. It has contained ripeness and 13% alcohol and a low pH of 3.27, denoting freshness. It's fine-boned and chalky, very tasty, with an almost salty finish and the classical Verdejo bitter twist. It's stunning! 1,468 bottles were filled in August 2025.
