There are no aromas of oak in the 2023 Carrasviñas Fermentado en Barrica, a varietal Verdejo that fermented and matured in barrel for six months. They are using more and more 500-liter barrels to make the impact of the oak lighter. It's ripe at 13.5% alcohol, keeping a low pH of 3.15 denoting freshness. It has complexity and depth, some citrus notes, hints of white flowers, fennel and faint spices. It's velvety and clean, with a tasty finish. 22,000 bottles produced. It was bottled in April 2024, weeks before I tasted it, but the wine felt quite harmonious and not dizzy at all.
