The still white 2023 Destellos was produced with 75% Palomino and 25% Arinto from Pago Miraflores and Pago Balbaína in Sanlúcar, an entry level to their wines from Jerez, fresh and light with a short skin maceration. It fermented and aged in large oak barrels that in the past had contained Amontillado and Manzanilla and were topped up every week. It has 12% alcohol with a pH of 3.3 and 5.5 grams of acidity, with freshness and character, classical notes of esparto grass and a hint of cloves, faintly medicinal, with a gentle mouthfeel and a dry and slightly bitter finish. 3,500 bottles produced. It was bottled in May 2024.
